Meet Carlo, our Food & Beverage Director:
How did you know the hospitality industry was for you?
My uncle was a successful restaurateur - he was passionate about it and it rubbed off!
What's your favourite part of the job?
I'm passionate about the content of the food. So working with the kitchen team, choosing wine, helping to create cocktails all excite me.
What's your favourite time of the week at Oddfellows?
I love a busy weekend. When you can feel the hotel buzz with the energy of people enjoying themselves - it energises you.
Why is Oddfellows different?
We're not a chain and we don't play by the rule book. If you have an idea and it's good- it can be implemented immediately. I've never worked anywhere before where I can be so creative with ideas.
How would your team describe you?
Very Italian! Passionate, a family man but also a good boss hopefully!
Best piece of advice you've been given?
I was told early on that hospitality wasn't for the weak. You have to be prepared to work when others are out and enjoying themselves. That's why it is a calling - you need to love it to succeed.
Family service or silver service?
Always silver service for me. Not at Oddfellows but my traditional service training helps me enormously in training my team. When you know how to do it properly, you can relax your style to suit.
